El Bulli alumni, former executive chef of Mandarin Oriental Hong Kong and Beef and Liberty brander Uwe Opocensky’s new restaurant Uwe is open and taking reservations … if you’re a party less than 16 people, that is. Uwe is an intimate dining space where guests are treated as the chef’s friends dining with him at home.
Interactive culinary journey
When Opocensky left the Mandarin group and joined Beef and Liberty, people speculated that the German-born chef was considering opening his own restaurant. The cozy space in Sheung Wan was originally considered for a short-term pop-up. Uwe says the restaurant was put together in one month, after he fell in love with the living-room-size space. In the centre of the room stands a birch tree, which Opocensky says reminds him of where he grew up.

The 16-seater dining room takes you on an dining journey that features only the best sustainable ingredients, sourced locally and from small producers, fishermen and farmers overseas. Filtering through the Japanese micro-seasons, Uwe’s plates reflect his emotions to create a thought-provoking tasting menu.
Exceptional food and wine pairing
The wine list at Uwe has been curated by Ken Wong—previously the Sommelier at the Mandarin Oriental—and consists of luxurious, unique and vintage labels from both old and new world. The list also includes a small impressive array of magnums and sakes.

Uwe serves a fixed six-course menu starting at HK$1,288 per person + 10% service charge (US $180). The restaurant is open four nights a week from Wednesday to Saturday, and reservations can be made online only via the tocktix website.
